Gourmet Chicken Sausages

 

Its officially grilling season and we can't take our eyes off of these gourmet chicken sausages. Each chicken sausage flavor is made with tender thigh meat marinated in small batches and slowly smoked over apple wood chips. With a range of cuisines and flavors to choose from, these toppings are guaranteed to please a crowd.

 
 

Bánh Mì Slaw
with Traditional Thai Chicken Sausage

 

Ingredients


1 head Bok Choy / shredded

1 head Napa Cabbage / shredded

1 bunch Cilantro / leaves picked

1 C Rainbow Carrot / shredded

½ C Sugar Snap Peas / thin sliced

1 jar Jansal Valley® Sliced Jalapeno Peppers / drained

2 T Lime Juice

2 T Jansal Valley® Ginger Ponzu

1 T Soy Sauce

1 T Fresh Garlic / grated

1 T Fish Sauce / optional

1 T Granulated Sugar

1 T Sriracha

1 pkg Jansal Valley® Traditional Thai Chicken Sausage / grilled

1 pkg Hot Dog Buns

Prepare all slaw ingredients. Toss together in a large mixing bowl. Adjust seasoning with extra soy sauce & granulated sugar, as needed.

Distribute evenly atop grilled sausages and buns. Enjoy!

 

Granny Smith & Jalapeno Slaw
with Chicken & Sweet Apple Sausage

 

Ingredients


4 Granny Smith Apples / grated

2 C Green Cabbage / grated

1 jar Jansal Valley® Sliced Jalapeno peppers / drained

1 C Crème Frâiche

¼ C Curly Parsley / chopped

1 T Jansal Valley® Celery Seeds

1 T Whole Grain Mustard

2 t Jansal Valley® French Mustard & Herb Blend

Salt & Pepper / to taste

1 pkg Jansal Valley® Chicken & Sweet Apple Sausage / grilled

1 pkg Hot Dog Buns

 

Method

Smoked Tomatillo & Avocado Salsa
with Smoked Chicken Cilantro Chipotle Sausage

 

Ingredients


2 C Jansal Valley® Applewood Chips

3 lb Tomatillos / husks removed / quartered

1 head Garlic / cloves peeled

1 Spanish Onion / peeled /quartered

¼ C Fondo di Trebbiano® White Balsamic Vinegar

2 Limes / juiced / zested

1 bunch Cilantro / leaves picked

3 Avocados / peeled / lightly mashed

Alderwood Smoked Salt / to taste

Cracked Black pepper / to taste

1 pkg Jansal Valley® Smoked Chicken Cilantro Chipotle Sausage / grilled

1 pkg Hot Dog Buns

 

Method


To create a stovetop smoker, find a perforated pan that fits snugly into another pan, or puncture several holes into a disposable aluminum pan. Place the wood chips in the bottom pan and place the perforated pan over the top. Over high heat, allow the woodchips to smolder until they begin to smoke, then reduce the heat to medium low. Add the tomatillos, garlic cloves, and onion into the perforated pan. Cover tightly with tin foil, and allow the tomatillos to smoke for about 20 minutes.

Preheat the oven to 350° F. After 20 minutes of smoking, transfer the tomatillo mixture to a baking sheet, and roast until everything is completely tender. Once tender, remove from the oven, and allow to cool completely, then mash all of the remaining ingredients together. Season Well with alderwood smoked salt & black pepper.

Distribute evenly atop grilled sausages and buns. Enjoy!
